everytime I go to sample perfumes, after a few minutes they all just smell the same, how can I find the one?

I love perfume but you really have to set out some time to find the right one, I’m picky about what I like. But after awhile of spraying and smelling and everything else, the stuff gets all over you and your fingers and then it just smells like a bunch of chemicals.
I love men’s cologne too, and it seems like cologne doesn’t vary as drastically as women’s perfume, so that makes shopping for my boyfriend even harder [I think it's sexy, I buy it, he doesn't care either way, he just wears it, it just works haha]
so what do you do when you’re trying to find the perfect scent?

Where do you go to smell perfume. The more upscale stores usually have coffee beans in jars out on the counters so you can cleanse your smelling senses in between perfumes
